Ingredients

8 oz. rotini pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini)

1 cup pepperoni slices

1 cup cucumber, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup bell peppers (red, yellow, or green), diced

1/4 cup fresh basil leaves

1/3 cup extra-virgin olive oil

2 tbsp red wine vinegar

1 tsp Italian seasoning

Salt and pepper to taste

Skewers (8-inch or longer)

Instructions

Cook the Pasta: Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Add the rotini pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and rinse it under cold water to halt the cooking process and cool it down. Set aside.

Prepare the Dressing: In a medium-sized bowl, combine the extra-virgin olive oil, red wine vinegar, Italian seasoning, and salt and pepper to taste. Whisk the ingredients together until well combined and emulsified. Set this flavorful dressing aside to let the flavors meld.

Assemble the Skewers: Take each skewer and start threading the ingredients in the following order for an eye-catching presentation: one cherry tomato, followed by one mozzarella ball, a slice of pepperoni, a cube of cucumber, several slices of bell pepper, a couple of Kalamata olives, and finish with a fresh basil leaf. Repeat this pattern until the skewer is filled but leave a few inches of space at each end for easy handling.

Coat the Skewers: Place the assembled skewers onto a large serving dish or platter. Drizzle the prepared dressing generously over the skewers. Using your hands or tongs, gently toss or turn the skewers to ensure they are evenly coated with the dressing.

Chill and Serve: Allow the skewers to marinate in the refrigerator for at least 30 minutes before serving. This chilling time allows the flavors to blend beautifully. Serve the skewers cold or at room temperature for the best taste.
