Ingredients

1 large head of cauliflower

3 tablespoons extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

Zest of 1 lemon

3 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional for spice)

Sea salt and freshly cracked black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Cauliflower:

    - Begin by removing the green leaves from the cauliflower and trimming the stem so that it stands upright. On a cutting board, carefully slice the cauliflower into 1-inch thick steaks. You should obtain about 2-3 steaks, depending on the size of the cauliflower. Don’t discard any leftover florets, as they can be roasted or used in other dishes.

      Make the Marinade:

        - In a mixing bowl, combine the olive oil, freshly squeezed lemon juice, lemon zest, and minced garlic. Add the dried oregano, thyme, smoked paprika, and red pepper flakes (if using) to the bowl. Season generously with sea salt and freshly cracked black pepper. Whisk until the mixture is well combined.

          Marinate the Steaks:

            - Place the cauliflower steaks in a large baking dish or a rimmed baking sheet. Use a brush or spoon to generously coat both sides of the steaks with the marinade, ensuring they are thoroughly covered. Allow the steaks to marinate at room temperature for a minimum of 20 minutes, or for enhanced flavor, cover and refrigerate for up to 1 hour.

              Preheat the Grill or Oven:

                - If you are grilling, heat your grill to medium-high. For baking, preheat your oven to 425°F (220°C).

                  Cook the Cauliflower Steaks:

                    - For Grilling: Once the grill is ready, carefully place the marinated cauliflower steaks on the grill. Cook for about 5-7 minutes on each side or until grill marks appear and the steaks are tender.

                      - For Baking: Lay the marinated cauliflower steaks on a lined baking sheet and roast in the oven for 25-30 minutes. Flip them halfway through cooking until the edges turn golden and the steaks are fork-tender.

                        Serve:

                          - After cooking, remove the cauliflower steaks from the grill or oven, allowing them to rest for about a minute. Sprinkle with freshly chopped parsley for a pop of color and serve alongside lemon wedges for an additional squeeze of refreshing citrus.
