Instructions

Marinate the Chicken:

    - In a large mixing bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, chopped thyme, chopped rosemary, honey, and a pinch of salt and pepper. Ensure all ingredients are well combined.

      - Add the chicken breasts to the marinade, turning them to coat thoroughly. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, or for best results, up to 2 hours to allow the flavors to infuse.

        Prepare the Couscous:

          - In a medium saucepan, bring the vegetable or chicken broth to a rolling boil. Stir in the couscous, olive oil, and salt.

            - Once combined, remove the saucepan from heat, cover it with a lid, and let it rest for about 5 minutes until all the liquid is absorbed. Use a fork to fluff the couscous and set it aside.

              Grill the Chicken:

                - Preheat your grill to medium-high heat.

                  - Take the chicken out of the marinade, discarding the excess marinade. Place the chicken on the hot grill and cook for approximately 6-7 minutes on each side, or until an internal temperature of 165°F (75°C) is reached and the chicken exhibits lovely grill marks.

                    Combine Couscous with Vegetables:

                      - In a large mixing bowl, combine the fluffed couscous with the halved cherry tomatoes, diced cucumber, finely chopped red onion, chopped parsley, and black pepper. Taste and adjust the seasoning, adding more salt or pepper if necessary.

                        Assemble the Bowls:

                          - Slice the grilled chicken into thin strips. In serving bowls, create a base of the couscous mixture and layer the sliced grilled chicken on top.

                            - If desired, sprinkle crumbled feta cheese over the chicken and couscous. Garnish each bowl with lemon wedges and additional fresh herbs for an enticing presentation.

                              Enjoy Your Meal:

                                - Dig into your delightful and refreshing Lemon Herb Grilled Chicken and Couscous Bowls, savoring the vibrant flavors and textures.
