Ingredients

4 salmon fillets (approximately 6 ounces each)

1 bunch of fresh asparagus (around 1 pound)

3 tablespoons olive oil, divided

2 tablespoons fresh lemon juice

Zest of 1 lemon (preferably organic for best flavor)

4 cloves garlic, finely minced

1 tablespoon fresh dill, roughly chopped

1 tablespoon fresh parsley, roughly chopped

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

Lemon wedges, for serving

Instructions

Marinate the Salmon: In a small mixing bowl, combine 2 tablespoons of olive oil, fresh lemon juice, lemon zest, minced garlic, chopped dill, chopped parsley, salt, and pepper. Whisk until well blended to create the marinade. Place the salmon fillets in a shallow dish, ensuring they are laid flat. Pour the marinade evenly over the fillets, covering them thoroughly. Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to enhance the flavors.

Prepare the Asparagus: While the salmon is marinating, rinse the asparagus spears under cold water to remove any grit. Snap off the woody ends of the asparagus by bending each spear; it will naturally break at the right point. In a large mixing bowl, drizzle the remaining 1 tablespoon of olive oil over the asparagus. Add a pinch of sea salt and freshly ground black pepper, then toss the asparagus until it is evenly coated with the oil and seasonings.

Preheat the Grill: Preheat your grill to medium-high heat, which is ideal for achieving those beautiful grill marks and even cooking. If you're using a grill pan on the stovetop, heat it over medium-high heat as well to ensure proper cooking.

Grill the Salmon: Once your grill is hot, carefully remove the salmon fillets from the marinade, allowing any excess marinade to drip off. Place the fillets skin-side down on the grill. Grill the salmon for approximately 4-5 minutes per side, adjusting the cooking time as needed based on the thickness of the fillets. The salmon is done when its internal temperature reaches 145°F (63°C) and it flakes easily with a fork.

Grill the Asparagus: Concurrently, add the prepared asparagus to the grill. Grill the asparagus for around 5-7 minutes, turning occasionally to ensure they are evenly cooked. You want them to be tender while still maintaining a slight crunch, with a nice char for flavor.

Serve: Once both the salmon and asparagus are cooked to perfection, carefully transfer them to a serving platter. Serve immediately while warm, garnished with fresh lemon wedges on the side to add a zesty burst of flavor.
