12 oz (340g) pasta (linguine or spaghetti)

1 cup ricotta cheese

1 large lemon (zest and juice)

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

½ cup freshly grated Parmesan cheese

Salt, to taste

Freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Optional: A pinch of red pepper flakes for a touch of heat

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package directions until al dente, usually about 8-10 minutes.

      - Before draining, reserve approximately 1 cup of the starchy pasta water. Once done, drain the pasta and set aside.

        Prepare the Sauce:

          - In a large skillet over medium heat, pour in the olive oil. Once the oil shimmer, add the minced garlic. Sauté for about 1-2 minutes, stirring frequently until the garlic is aromatic but not browned, as burnt garlic can impart a bitter flavor.

            Incorporate Ricotta:
