Ingredients

1 lb ground beef (preferably 80/20 for a good balance of flavor)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 large head of romaine or butter lettuce (to create cups)

½ cup diced tomatoes

½ cup diced pickles

¼ cup diced red onion

¼ cup mayonnaise (or substitute with mashed avocado or Greek yogurt)

1 tablespoon mustard (optional)

Fresh herbs for garnish (such as parsley or cilantro, optional)

Instructions

Prepare the Ingredients: Begin by rinsing the lettuce leaves under cool water, ensuring no grit remains, then gently pat them dry with a clean towel. Set aside. Dice the tomatoes, pickles, and red onion into small pieces for easy assembly.

Cook the Beef: In a large skillet set over medium-high heat, add the olive oil and allow it to warm. Next, add the ground beef. As it cooks, use a spatula to break the meat apart so it browns evenly. Season the beef with the garlic powder, onion powder, smoked paprika, and season with salt and pepper. Stir occasionally and cook until the meat is browned and well-cooked, about 8-10 minutes. If there is excess fat after cooking, carefully drain it off.

Add Cheese: Evenly sprinkle the shredded cheddar cheese over the hot, cooked beef. Lower the heat to low, cover the skillet with a lid, and let it sit for about 2-3 minutes or until the cheese is fully melted.

Assemble the Cups: Take a lettuce leaf and place it on a serving plate. Spoon a generous portion of the cheesy beef mixture into the center of the leaf. Finish by adding the diced tomatoes, pickles, and red onion. Top with a dollop of mayonnaise and mustard if you choose to include it.

Garnish and Serve: If you wish to enhance the dish further, sprinkle fresh herbs on top for a pop of color and flavor. Serve the lettuce cups immediately, allowing guests to fold the leaves around the filling like a taco for a fun and delicious bite.
