Ingredients

For the Crust:

1 ¾ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz (2 packages) cream cheese, softened to room temperature

¾ cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

1 tablespoon freshly squeezed lemon juice

1 cup fresh blueberries (reserve some for topping)

For the Blueberry Topping:

1 cup fresh or frozen blueberries

¼ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon freshly squeezed lemon juice

2 tablespoons water

Instructions

Preheat the Oven:

Begin by preheating your oven to 325°F (160°C). Prepare a 9x9-inch baking pan by greasing it lightly or lining it with parchment paper for easier removal later.

      Prepare the Crust:

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the ingredients are well incorporated and resemble wet sand. Using the back of a measuring cup or your fingers, firmly press the mixture into the bottom of the prepared pan to create an even layer. Bake in the preheated oven for 10 minutes. When done, remove from the oven and allow it to cool while you make the cheesecake filling.

          Make the Cheesecake Filling:

In a large mixing bowl, place the softened cream cheese. Using an electric mixer set to medium speed, beat the cream cheese until it is smooth and creamy, free of lumps. Gradually add the granulated sugar, continuing to mix until well blended. Crack in the eggs one at a time, mixing just until each is incorporated—avoid overmixing. Add in the vanilla extract, lemon juice, and gently fold in the blueberries with a spatula, ensuring they are evenly distributed without breaking them.

              Assemble the Cheesecake Bars:

Pour the cheesecake filling over the cooled crust, using a spatula to spread it evenly across the top. Place the baking pan back into the oven and bake for 25-30 minutes, or until the edges are set, and the center has a slight jiggle. Once baked, allow it to cool at room temperature for about 1 hour, then refrigerate for at least 4 hours (or overnight) to let it fully set.

                  Prepare the Blueberry Topping:

In a small saucepan over medium heat, combine the blueberries, granulated sugar, cornstarch, lemon juice, and water. Cook while gently stirring, allowing the mixture to simmer until the blueberries start to burst and the liquid thickens, which should take about 5-7 minutes. Once thickened, remove the saucepan from heat and allow it to cool.

                      Serve:

After the cheesecake bars have fully set in the refrigerator, gently spread the cooled blueberry topping over the chilled cheesecake layer, ensuring it's evenly distributed. Slice the dessert into squares, serve chilled, and indulge in the delightful creaminess paired with fresh fruit flavors!

Prep Time: 20 minutes | Total Time: 5 hours 30 minutes | Servings: 16 bars

                            - Presentation Tips: For an elegant touch, consider garnishing each slice with a mint leaf or a sprinkle of additional blueberries around the plate when serving. Enjoy!
