1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

16 oz (2 packages) cream cheese, softened at room temperature

½ cup granulated sugar

2 large eggs, at room temperature

1 teaspoon pure vanilla extract

1 tablespoon all-purpose flour

1 cup sour cream, at room temperature

For the blueberry topping:

2 cups fresh blueberries (or frozen blueberries, thawed and drained)

½ cup granulated sugar

1 tablespoon freshly squeezed lemon juice

1 tablespoon cornstarch

¼ cup water

For garnish:

Optional: whipped cream and additional blueberries for serving

Preheat the Oven: Begin by preheating your oven to 325°F (163°C). Prepare an 8x8-inch baking pan by lining it with parchment paper, allowing for some edges to hang over for easy removal later. Lightly grease the parchment paper to prevent sticking.

    Make the Crust: In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the texture resembles wet sand. Firmly press this mixture into the bottom of the prepared baking pan to create an even layer. Bake in the preheated oven for 10 minutes, then remove and let it cool slightly while preparing the filling.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar, mixing until well combined. Incorporate the eggs one at a time, ensuring each is fully blended before adding the next. Scrape down the sides of the bowl as needed. Next, mix in the vanilla extract and flour until the mixture is smooth and uniform. Gently fold in the sour cream until fully incorporated.
