Prepare the Mango Glaze: In a blender or food processor, combine the diced mango, honey, soy sauce, lime juice, minced garlic, grated ginger, and a pinch of salt and pepper. Blend the mixture until it reaches a smooth and creamy consistency. Set aside half of the glaze for later use.

    Marinate the Shrimp: In a large mixing bowl, add the peeled and deveined shrimp. Pour half of the mango glaze over the shrimp, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for 15-30 minutes to absorb the flavors.
