Mango Glazed Turkey

Ingredients
  

1 whole turkey (12-14 pounds)

1 cup mango juice

1 cup fresh mango puree (from about 2 ripe mangos)

1/2 cup honey

1/4 cup soy sauce

1/4 cup olive oil

2 tablespoons fresh ginger, minced

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Turkey:

    - If the turkey is frozen, allow it to thaw in the refrigerator for several days. Once thawed, remove the giblets and neck from the cavity. Pat the exterior and interior of the turkey dry with paper towels to ensure a crisp skin when roasting.

      Make the Mango Glaze:

        - In a medium saucepan, combine the mango juice, mango puree, honey, soy sauce, olive oil, minced ginger, minced garlic, Dijon mustard, ground cumin, and smoked paprika.

          - Stir the mixture together and heat it over medium heat. Allow it to come to a gentle boil, then reduce the heat and let it simmer for approximately 10-15 minutes, until it thickens slightly. After that, remove the saucepan from the heat and let the glaze cool.

            Season the Turkey:

              - Preheat your oven to 325°F (165°C).

                - Generously season the inside of the turkey cavity with salt and pepper. For additional flavor, consider stuffing the cavity with slices of onion, lemon, and a handful of fresh herbs like thyme or rosemary.

                  Glaze the Turkey:

                    - Transfer the turkey onto a roasting rack positioned in a large roasting pan. Using a basting brush or spoon, apply a generous coating of the mango glaze over the turkey, ensuring all areas are thoroughly covered. Set aside some of the glaze for basting during roasting.

                      Roast the Turkey:

                        - Place the turkey in the preheated oven and roast. Every 30 minutes, baste the turkey with the reserved mango glaze to keep it moist and flavorful. The general roasting time is about 13-15 minutes per pound. The turkey is fully cooked when the internal temperature registers at 165°F (74°C) in the thickest part of the thigh.

                          Rest and Serve:

                            - After cooking, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving. Resting allows the juices to redistribute, resulting in a juicier turkey.

                              - Optionally garnish with fresh cilantro or parsley for a pop of color, and serve alongside your favorite side dishes.
