2 medium boneless, skinless chicken breasts

1 ripe mango, diced

1 small red onion, finely chopped

1-2 jalapeños, seeds removed and minced (adjust based on your heat preference)

1 cup cooked brown rice or quinoa

1 cup black beans (canned, drained and rinsed)

1 avocado, sliced

1 cup cherry tomatoes, halved

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, for garnish

Marinate the Chicken: In a mixing bowl, whisk together the olive oil, lime juice, ground cumin, smoked paprika, salt, and pepper until well combined. Add the chicken breasts, ensuring they are completely coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours to enhance the flavor.

    Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Once hot, remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken in the pan and cook for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C) and is no longer pink in the center. Remove the chicken from the pan and let it rest for a few minutes before slicing it into strips.
