Ingredients

2 cups rolled oats

1 cup nuts (choose between almonds or pecans, roughly chopped)

1/2 cup unsweetened shredded coconut

1/2 cup pumpkin seeds (also known as pepitas)

1/4 cup sunflower seeds

1/2 cup pure maple syrup

1/3 cup coconut oil (melted)

1 tablespoon ground cinnamon

1/2 teaspoon pure vanilla extract

1/4 teaspoon fine sea salt

1/2 cup dried fruits (optional: raisins, cranberries, or your favorite mix)

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (165°C). While it heats up, prepare a baking sheet by lining it with parchment paper to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, shredded coconut, pumpkin seeds, sunflower seeds, ground cinnamon, and fine sea salt. Use a wooden spoon or spatula to stir well, ensuring each dry ingredient is evenly distributed.

Prepare Wet Ingredients: In a separate bowl, whisk together the pure maple syrup, melted coconut oil, and pure vanilla extract until you achieve a uniform mixture.

Combine Mixtures: Pour the wet mixture over the dry ingredients in the large mixing bowl. Stir thoroughly until all the dry ingredients are well coated with the liquid. If you're including dried fruit, gently fold it into the mixture at this stage.

Transfer to Baking Sheet: Carefully spread the mixture out onto the lined baking sheet in an even layer. Press down gently with the back of a spoon or your hands to form clusters as you do this.

Bake the Clusters: Place the baking sheet in the preheated oven and bake for 25-30 minutes. Stir the mixture halfway through the baking time, keeping a close watch to avoid burning. The clusters should turn a lovely golden brown when they are done.

Cool Down: After baking, remove the baking sheet from the oven and allow the mixture to cool completely on the sheet. As it cools, it will firm up and form crunchy clusters.

Store Your Clusters: Once fully cooled, break the granola into clusters of your desired size. Transfer them to an airtight container and store at room temperature for up to two weeks to maintain freshness.
