Maple Roasted Beets with Feta

4 medium beets, trimmed and scrubbed

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper, to taste

½ cup feta cheese, crumbled

¼ cup walnuts, roughly chopped (optional)

Fresh parsley, chopped, for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Beets: Individually wrap each beet in aluminum foil. Arrange the foil-wrapped beets on a baking sheet and roast them in the preheated oven for 45-60 minutes. They are done when a fork can easily pierce through the largest beet. Once finished, remove from the oven and let them cool slightly before handling.

      Peel the Beets: After the beets have cooled enough to handle, use your fingers or a paper towel to gently rub away the skins. Cut the peeled beets into wedges.

        Make the Maple Glaze: In a small mixing bowl, whisk together the olive oil, maple syrup, fresh thyme (or dried thyme), salt, and freshly ground black pepper until everything is thoroughly combined.

          Coat the Beets: In a large mixing bowl, add the beet wedges and pour the maple glaze over them. Toss until the beets are evenly coated in the glaze.

            Roast Again: Spread the glazed beet wedges in a single layer back onto the baking sheet. Roast them in the oven for an additional 20-25 minutes, turning the beets halfway through cooking, until they are caramelized and tender.

              Prepare the Feta and Walnuts: If using walnuts, place them in a dry skillet over medium heat and toast them for about 5 minutes, stirring occasionally, until they become fragrant and slightly golden. Remove from heat and set aside.

                Assemble the Dish: After the final roasting, transfer the beets to a serving platter. Scatter the crumbled feta cheese and toasted walnuts (if using) generously over the top.
