For the Cauliflower Buns:

1 medium head of cauliflower, chopped into florets

1/2 cup shredded mozzarella cheese

1/4 cup almond flour (or your choice of alternative flour)

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 teaspoon dried oregano

For the BBQ Filling:

1 cup cooked and shredded jackfruit (or pulled chicken for a non-vegetarian option)

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

1/2 teaspoon smoked paprika

1/4 cup chopped green onions (for garnish)

For Serving:

Fresh lettuce leaves (for added crunch)

Pickles (optional)

Sliced tomatoes (optional)

Instructions

Prepare the Cauliflower Buns:

    - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

      - Steam or microwave the cauliflower florets until tender, approximately 5–7 minutes. Once cooked, drain any excess water and let the florets cool slightly.

        - In a food processor, pulse the cooked cauliflower until it reaches a rice-like texture. To remove excess moisture, wrap the processed cauliflower in a clean kitchen towel and squeeze out any liquid.

          - In a mixing bowl, combine the riced cauliflower, mozzarella cheese, almond flour, egg, garlic powder, onion powder, oregano, salt, and pepper. Stir thoroughly until all ingredients are well incorporated.

            - Form the mixture into small patties about 2–3 inches in diameter and arrange them on the prepared baking sheet.

              - Bake in the preheated oven for 25–30 minutes, flipping the patties halfway through, until they are golden brown and firm to the touch.

                Make the BBQ Filling:

                  - In a medium bowl, mix together the shredded jackfruit (or chicken) with the BBQ sauce, apple cider vinegar, and smoked paprika. Ensure the meat is evenly coated in the sauce.

                    - Transfer the mixture to a saucepan and heat over medium heat, stirring occasionally for about 5–7 minutes or until warmed through.

                      Assemble the Sliders:

                        - Allow the baked cauliflower buns to cool for a few minutes on a wire rack.

                          - To assemble, take one cauliflower bun and top it with a generous scoop of the BBQ filling. Sprinkle with a few green onions and add a lettuce leaf along with any additional toppings you desire, such as pickles or sliced tomatoes.

                            - Place another cauliflower bun on top to complete the slider.

                              Serve:

                                - Repeat the assembly process with the remaining cauliflower buns and BBQ filling.

                                  - Serve the sliders warm, and enjoy your flavorful Mini BBQ Cauliflower Slider Buns!
