1 can (20 oz) young green jackfruit in brine or water, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup BBQ sauce (your choice of flavor)

12 mini slider buns or taco-sized tortillas

½ cup red cabbage, shredded

½ cup fresh cilantro, chopped

Prepare Jackfruit: Start by draining and rinsing the jackfruit. Using a sharp knife, cut the jackfruit into smaller pieces, removing any tough core sections. With your fingers, shred the jackfruit to create a texture that resembles pulled pork.
