1 cup black beans, drained and rinsed

1 cup cherry tomatoes, quartered

1 ripe avocado, diced

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, finely chopped

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's ready for the tortilla cups.

    Prepare Tortilla Cups: Lightly brush both sides of each corn tortilla with olive oil. Gently press the tortillas into the wells of a muffin tin to form small cups. If needed, you can use baking cups or muffin liners to help create the shape.

      Bake Tortilla Cups: Place the muffin tin in the preheated oven and bake for approximately 10-12 minutes, or until the tortillas become golden brown and crisp. Once they are done, carefully remove the muffin tin from the oven and set the cups aside to cool slightly.

        Scramble the Eggs: In a medium-sized bowl, whisk together the eggs, smoked paprika, salt, and pepper until thoroughly mixed. Heat a non-stick skillet over medium heat. Pour the egg mixture into the skillet and scramble the eggs, cooking for about 4-5 minutes or until they are fully cooked and fluffy. Once done, remove the skillet from the heat.
