Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken breast, cut into small cubes

3 cloves of garlic, minced

1 tablespoon dried oregano

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons extra virgin olive oil

Juice of 1 fresh lemon

For the Tzatziki Sauce:

1 cup creamy Greek yogurt

½ cucumber, grated and excess water squeezed out

2 cloves of garlic, minced

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)

1 tablespoon extra virgin olive oil

1 tablespoon white vinegar (or red wine vinegar)

Salt and pepper to taste

For Assembling:

12 mini whole wheat pita breads

1 cup shredded romaine lettuce

1 cup diced ripe tomatoes

½ red onion, thinly sliced

Crumbled feta cheese (optional)

Extra fresh dill for garnish (optional)

Instructions

Marinate the Chicken:

In a large mixing bowl, whisk together the minced garlic, dried oregano, ground cumin, smoked paprika, salt, pepper, olive oil, and lemon juice. Add the cubed chicken breast to the bowl, tossing to ensure every piece is well coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to infuse (or up to 2 hours for a more intense flavor).

      Prepare the Tzatziki Sauce:

In a medium-sized bowl, mix together the Greek yogurt, grated cucumber (ensuring it’s well-drained), minced garlic, chopped fresh dill, olive oil, vinegar, and a few pinches of salt and pepper. Stir until all ingredients are harmoniously blended. Cover and refrigerate for at least 15 minutes to develop the flavors.

          Cook the Chicken:

Heat a large skillet over medium-high heat. Once hot, add the marinated chicken to the skillet, spreading it out in a single layer. Cook for 8-10 minutes, stirring occasionally, until the chicken is fully cooked and golden brown on the outside. Use a meat thermometer to check that the internal temperature has reached 165°F (75°C).

              Assemble the Sliders:

Lightly warm the mini whole wheat pita breads in a dry skillet or a preheated oven for a few minutes until slightly toasted and pliable. If desired, you can cut them in half to create pockets or leave them whole. Fill each pita with a generous spoonful of the cooked chicken, then add a dollop of the tzatziki sauce. Top with shredded lettuce, diced tomatoes, and slices of red onion. If you like, sprinkle crumbled feta cheese over the top for added richness.

                  Serve & Enjoy:

Arrange the completed sliders on a decorative platter. For a pop of color, sprinkle extra fresh dill over the sliders, if using. Serve immediately, and enjoy these delightful mini gyro sliders as a perfect appetizer or a quick meal option!
