Ingredients

2 cups fresh spinach, chopped

8 large egg whites

1/2 cup low-fat cottage cheese

1/2 cup shredded low-fat mozzarella cheese

1/4 cup diced bell pepper (any color)

1/4 cup diced onion

2 tablespoons fresh chives, chopped

1 teaspoon garlic powder

Salt and pepper to taste

Cooking spray or olive oil for greasing muffin tin

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven is warming up, lightly grease a 12-cup muffin tin using cooking spray or a little olive oil to prevent sticking.

Sauté Vegetables: Heat a medium skillet over medium heat. Add the chopped onion and diced bell pepper to the skillet. Sauté for about 3-4 minutes, or until the vegetables become tender. Next, stir in the chopped spinach and cook for an additional 2 minutes, just until it wilts. Once done, remove the skillet from the heat and allow the mixture to cool slightly.

Mix Egg White Base: In a large mixing bowl, whisk together the egg whites, cottage cheese, shredded mozzarella cheese, garlic powder, and a pinch of salt and pepper. Mix until all ingredients are thoroughly combined and the mixture is slightly frothy.

Combine: Gently fold the sautéed vegetable mixture into the egg white base. Use a spatula to ensure all the vegetables are evenly distributed within the egg mixture without overmixing.

Fill Muffin Tins: Carefully pour the combined mixture into each cup of the prepared muffin tin, filling them about three-quarters full to allow for rising while baking.

Bake: Place the muffin tin in the preheated oven and bake for approximately 20-25 minutes. The muffins should be firm to the touch and lightly golden on top when ready.

Cool and Serve: Once baked, remove the muffin tin from the oven and allow it to cool for a few minutes. Carefully run a butter knife around the edges of the muffins to help release them, then gently pop them out of the tin.

Enjoy: These savory muffins are delicious warm and can be enjoyed immediately. Alternatively, let them cool completely and store in an airtight container for a convenient breakfast, healthy snack, or portable meal option!
