1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

2 cups ice cream (flavor of your choice)

Instructions
 

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir well until all the crumbs are completely coated and the mixture resembles wet sand.

    Form the pie crusts: Take a mini tart pan or a muffin tin and firmly press the crumb mixture into the bottoms and up the sides to form 8 mini crusts. Make sure to pack it tightly for stability. Place the crusts in the refrigerator for about 15 minutes to help them set.

      Add ice cream: Scoop your chosen flavor of ice cream into a mixing bowl and let it sit at room temperature for about 5-10 minutes until it softens just enough to be mixable. Fold in the mini chocolate chips or any other toppings you desire.

        Fill the crusts: Remove the chilled crusts from the refrigerator. Spoon the ice cream mixture into each crust, filling them generously to the top. Use a spatula to smooth the surface for an even finish.

          Freeze the mini pies: Cover the filled mini pies with plastic wrap to prevent freezer burn. Place them in the freezer and let them freeze for at least 4 hours, or until they are completely solid.
