2 medium zucchinis

1 cup cooked quinoa

1/2 cup cherry tomatoes, diced

1/4 cup red bell pepper, finely chopped

1/4 cup shredded mozzarella cheese

2 tablespoons fresh basil, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for an extra kick

Prepare the Zucchini: Start by trimming both ends of the zucchinis. Next, slice them into rings about 1 inch thick. With a small spoon or a melon baller, gently scoop out the center of each zucchini ring, creating a small cavity while ensuring not to pierce the base. Set the hollowed rings aside.

    Preheat the Oven: Set your oven to preheat at 375°F (190°C) so it’s ready for baking when you're done preparing the zucchini.

      Prepare the Filling: In a mixing bowl, combine the cooked quinoa, diced cherry tomatoes, finely chopped red bell pepper, shredded mozzarella cheese, chopped fresh basil, olive oil, garlic powder, onion powder, salt, and pepper. Stir the mixture thoroughly until all ingredients are evenly incorporated.

        Stuff the Zucchini: Carefully spoon the quinoa filling into each zucchini ring, pressing down gently to ensure the mixture is compacted but not overflowing.
