½ cup milk (or your choice of dairy-free alternative)

1 cup roasted red peppers, finely chopped

½ cup feta cheese, crumbled

¼ teaspoon garlic powder

¼ teaspoon onion powder

Salt and black pepper, to taste

¼ teaspoon red pepper flakes (optional, for a little heat)

Olive oil spray (for greasing the muffin tin)

Preheat the Oven: Set your oven to 350°F (175°C). While it heats up, lightly grease a mini muffin tin using olive oil spray to prevent sticking.

    Whisk the Eggs: In a large mixing bowl, crack the eggs open and pour in the milk. Using a whisk, blend the two together until well mixed and slightly frothy, ensuring the eggs are fully incorporated.

      Incorporate Seasonings: Add the garlic powder, onion powder, salt, black pepper, and red pepper flakes (if desired) into the egg mixture. Stir thoroughly until the seasonings are evenly distributed throughout the mixture.

        Fold in the Vegetables: Carefully add the chopped roasted red peppers, finely chopped spinach, and crumbled feta cheese to the egg mixture. Gently fold them in with a spatula to ensure they are well mixed without breaking the cheese.

          Fill the Muffin Tin: Using a ladle or measuring cup, pour the egg mixture into each cup of the prepared mini muffin tin, filling each one about ¾ full to allow enough space for the egg bites to puff up as they bake.
