Mini Turkey Pita Pockets with Hummus

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

4 whole wheat pita pockets

1 cup hummus (store-bought or homemade)

1 medium cucumber, diced

1 cup cherry tomatoes, halved

½ cup shredded lettuce

¼ cup crumbled feta cheese (optional)

Fresh parsley, chopped, for garnish

Cook the Turkey: Begin by heating a skillet over medium heat and adding the olive oil. Once the oil is shimmering, add the ground turkey. Use a wooden spoon to break the meat into small crumbles. Cook the turkey for approximately 5-7 minutes, stirring occasionally, until it is browned and fully cooked through.

    Season the Meat: Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to evenly coat the turkey with the spices. Allow it to cook for an additional 2-3 minutes to enhance the flavors, then remove the skillet from heat. Set the turkey mixture aside to cool slightly.

      Prep the Pitas: While the turkey is cooking, slice each whole wheat pita pocket in half to create two pockets from each pita. If you'd like a warm texture, place the pita halves in a toaster or on a heated pan for about 1-2 minutes until slightly warmed.
