Ingredients

1 pound ground turkey

1 tablespoon olive oil

1 medium onion, finely diced

2 cloves garlic, minced

1 tablespoon taco seasoning

1 cup canned diced tomatoes (with juices)

1 can black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 lime, juiced

Salt and pepper, to taste

1 head of butter lettuce (or iceberg), leaves separated and washed

Toppings: diced avocado, shredded cheese, chopped cilantro, sliced jalapeños, and sour cream

Instructions

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely diced onion and sauté for about 3-4 minutes until the onion becomes translucent and fragrant. Next, add the minced garlic and continue cooking for an additional minute, stirring often to prevent burning.

Brown the Turkey: Introduce the ground turkey into the skillet. Use a spatula to break the meat apart, stirring as it cooks. Brown the turkey until it is fully cooked and no longer pink, which should take about 5-7 minutes.

Season and Simmer: Once the turkey is browned, stir in the taco seasoning along with the canned diced tomatoes (including their juices), drained black beans, corn, lime juice, and a pinch of salt and pepper. Mix thoroughly until all ingredients are combined. Bring the mixture to a gentle simmer and reduce the heat to low. Allow it to cook for an additional 5-10 minutes, letting the flavors meld beautifully.

Prepare the Lettuce Cups: While the turkey mixture simmers, wash and dry the lettuce leaves. Select the largest and most intact leaves to serve as your cups, ensuring they can hold the filling without tearing.

Assemble the Cups: Using a spoon, generously fill each lettuce leaf with the flavorful turkey mixture. Top these with your favorite toppings such as diced avocado, a sprinkle of shredded cheese, fresh chopped cilantro, sliced jalapeños for a kick, and a dollop of creamy sour cream.

Serve: Arrange the assembled lettuce cups on a serving platter for an attractive display. These mini turkey tacos are best enjoyed immediately to savor their freshness and vibrant flavors!
