1 cup zucchini, finely grated and squeezed dry

1 cup sharp cheddar cheese, shredded

3 large eggs

1/2 cup heavy cream

1/4 cup milk

1/2 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 package (1 sheet) refrigerated pie crust or phyllo dough

Cooking spray or olive oil for greasing the muffin tin

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). While it heats, lightly grease a mini muffin tin with cooking spray or a drizzle of olive oil to ensure easy removal of the quiche bites later.

    Prepare the Dough: On a clean, lightly floured surface, roll out the pie crust or phyllo dough. If you’re using pie crust, employ a round cookie cutter or the rim of a glass to cut out circles that are slightly larger than the mini muffin tin cups. For phyllo dough, layer a few sheets together, brushing each with olive oil to keep them from sticking, then cut into squares.

      Place the Dough in the Tin: Gently press the cut circles or squares of dough into the cups of the muffin tin, ensuring they fit snugly along the bottom and sides. Use a fork to dock the bottom of each crust, making small holes to prevent puffing during baking.

        Prepare the Filling: In a mixing bowl, whisk together the eggs, heavy cream, and milk until they are fully blended. Add in the grated zucchini, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are evenly combined.

          Fill the Dough Cups: Carefully pour the zucchini mixture into each prepared crust, filling them to just below the top (about ¾ full) to allow room for the quiches to rise while baking.
