4 boneless, skinless chicken breasts

1 teaspoon Italian seasoning

Salt and black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, finely minced

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 small zucchini, diced into bite-sized pieces

1 cup cherry tomatoes, halved

1 cup marinara sauce (store-bought or homemade)

1 teaspoon balsamic vinegar

1 cup fresh basil leaves, roughly chopped

1 cup mozzarella cheese, shredded

Prepare the Chicken: Start by seasoning both sides of the chicken breasts with Italian seasoning, salt, and pepper, ensuring they are evenly coated.

    Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the seasoned chicken breasts. Sear them for about 6-7 minutes on each side, or until they achieve a golden-brown coloration and are cooked through. Afterward, transfer the chicken to a plate and set aside.

      Sauté the Vegetables: In the same skillet, lower the heat slightly and add the minced garlic. Sauté for about 30 seconds until fragrant, then add the sliced red and yellow bell peppers along with the diced zucchini. Cook these vegetables for approximately 4-5 minutes, stirring occasionally, until they are tender yet still crisp.

        Add Tomatoes and Sauce: Stir in the halved cherry tomatoes and pour in the marinara sauce, mixing well. Add the balsamic vinegar for a touch of acidity and stir to combine. Allow the sauce to simmer gently for 3-4 minutes, letting the flavors meld together.
