1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened to room temperature

1 cup powdered sugar

1 teaspoon pure vanilla extract

1 cup heavy whipping cream, chilled

1 1/2 cups fresh blueberries, plus extra for garnish

2 tablespoons lemon juice

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the crust:

    In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the mixture resembles wet sand. Divide the crust mixture evenly among 6 serving cups, pressing down firmly to form a compact base in each cup.

      Make the cheesecake filling:

        In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it's smooth and creamy, about 2-3 minutes. Gradually add the powdered sugar and vanilla extract, continuing to mix until fully combined and fluffy.

          Whip the cream:

            In a separate bowl, whip the chilled heavy whipping cream using an electric mixer until soft peaks form, approximately 3-5 minutes. Gently fold the whipped cream into the cream cheese mixture using a spatula, taking care not to deflate the whipped cream—stop when no streaks remain.

              Combine with blueberries:
