Ingredients

2 cups rolled oats

1 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/2 cup dark chocolate chips

1/4 cup chopped nuts (walnuts or almonds, optional)

1/4 cup shredded coconut (optional)

A pinch of salt

1 teaspoon vanilla extract

Instructions

Prepare the Pan: Start by lining an 8x8 inch baking dish with parchment paper, ensuring that there is some overhang on the sides. This will make it easier to lift the bars out after they've set.

Mix Wet Ingredients: In a medium-sized mixing bowl, combine the almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. To make mixing easier, microwave this mixture for about 20-30 seconds until it’s warm. Stir vigorously until all ingredients are well combined and smooth.

Incorporate Cocoa Powder: Slowly sift the unsweetened cocoa powder into the wet mixture. Stir until the cocoa is fully incorporated and the mixture is velvety and uniform in color.

Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, chopped nuts (if using), and shredded coconut (if desired). Use a wooden spoon or spatula to ensure that these dry ingredients are thoroughly mixed.

Merge Mixtures: Gently fold the dry ingredient mixture into the wet ingredient mixture. Stir until everything is combined, making sure there are no dry patches. If the mixture appears too dry, feel free to add a bit more honey or almond butter to achieve the desired consistency.

Incorporate Chocolate Chips: Carefully fold in the dark chocolate chips, ensuring that they are evenly distributed throughout the oat mixture.

Press into the Pan: Transfer the combined mixture into the prepared baking dish. Use a spatula or your hands to firmly and evenly press the mixture down into the pan. This step is important to ensure that the bars hold together once set.

Chill: Place the baking dish in the refrigerator for a minimum of 2 hours. This will allow the mixture to firm up appropriately, making it easier to cut into bars.

Cut & Serve: Once the bars have set, lift them out of the dish using the parchment paper overhang. Use a sharp knife to cut into squares or rectangles. Enjoy these delightful bars as a quick snack or a healthy dessert!
