One-Pan Beef and Quinoa Stuffed Peppers

4 medium bell peppers (any color)

1 lb ground beef (preferably lean)

1 cup quinoa, rinsed and drained

2 cups vegetable or beef broth

1 small onion, finely diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's ready for baking.

    Prepare the Quinoa: In a medium saucepan, combine the rinsed quinoa with the broth. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover with a lid, and let simmer for about 15 minutes, or until all the liquid is absorbed. Once cooked, remove from heat and fluff with a fork. Set aside.

      Sauté the Vegetables: While the quinoa cooks, heat a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Stir in the minced garlic and continue cooking for another minute until fragrant.

        Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook for about 5-7 minutes, stirring frequently and breaking apart the meat with a wooden spoon, until it’s no longer pink. Drain any excess fat from the skillet.

          Incorporate Spices and Tomatoes: Add the diced tomatoes with their juices to the beef mixture. Sprinkle in the smoked paprika, ground cumin, dried oregano, and season with salt and pepper. Stir thoroughly to combine and allow it to simmer for about 5 minutes, letting the flavors meld together.

            Combine with Quinoa: Once the beef mixture has simmered, add the fluffed quinoa to the skillet. Gently stir until everything is mixed well. Taste and adjust seasoning with additional salt and pepper if desired.

              Prepare the Bell Peppers: While the mixture cools slightly, carefully cut the tops off the bell peppers and remove the seeds and membranes. Arrange the peppers upright in a baking dish.

                Stuff the Peppers: Take the quinoa and beef mixture and spoon it into each bell pepper, packing it down gently to ensure they are filled. Finish by generously topping each with shredded cheese.

                  Bake the Stuffed Peppers: Cover the baking dish with aluminum foil and place in the preheated oven. Bake for 25 minutes. After this time, remove the foil and bake for another 10 minutes, or until the peppers are tender and the cheese is melted and golden.

                    Garnish and Serve: Take the stuffed peppers out of the oven and let them cool for a few minutes. Before serving, sprinkle with freshly chopped parsley for a pop of color and freshness.
