1 lb large shrimp, peeled and deveined

2 cups fresh or frozen peas, thawed

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

Zest and juice of 1 lemon

1/4 cup chicken or vegetable broth

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

1 cup quinoa or rice, cooked (optional, for serving)

Prepare the Ingredients: Thaw frozen peas under cool water if using. Mince the garlic, finely chop the onion, and halve the cherry tomatoes. Zest the lemon, then juice it, making sure to keep the zest and juice separate for later use.

    Sauté the Aromatics: In a large skillet or frying pan, heat 3 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Sauté for 2-3 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

      Cook the Garlic: Stir in the minced garlic and the red pepper flakes into the skillet with the onions. Keep stirring for about 30 seconds until the garlic is fragrant but be careful not to let it burn, as burnt garlic can become bitter.
