Ingredients

4 salmon fillets (approximately 6 ounces each)

1 bunch of fresh asparagus, trimmed

3 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

Zest and juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly cracked black pepper, to taste

Fresh parsley, finely chopped, for garnish

Lemon wedges, for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot enough for roasting.

Prepare the Marinade: In a small mixing bowl, whisk together 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried thyme, and a pinch of salt and pepper until well combined.

Marinate the Salmon: Place the salmon fillets skin-side up in a shallow dish or resealable bag. Pour half of the marinade over the fillets, ensuring they’re evenly coated. Allow the salmon to marinate for 10-15 minutes at room temperature to absorb the flavors.

Arrange the Asparagus: While the salmon marinates, spread the trimmed asparagus evenly on a large baking sheet. Drizzle with the remaining tablespoon of olive oil. Season with salt and pepper, then toss the asparagus to coat it evenly.

Position the Salmon on the Baking Sheet: After marinating, carefully place the salmon fillets skin-side down on the baking sheet alongside the asparagus.

Bake to Perfection: Pour any remaining marinade over both the salmon and asparagus. Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender yet still retains its vibrant green color.

Garnish and Serve: Once cooked, remove the baking sheet from the oven. Sprinkle the dish with freshly chopped parsley for a pop of color and flavor. Serve immediately with lemon wedges on the side for an added zesty kick.
