1 pound ground turkey

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper (adjust to taste)

2 tablespoons olive oil

1 cup fresh spinach, roughly chopped

2 large eggs (optional, for serving)

Fresh parsley, chopped (for garnish)

Hot sauce (optional, for serving)

Prepare the Ingredients: Start by peeling the sweet potatoes and cutting them into 1/2-inch cubes. Dice the red and green bell peppers as well as the onion. Mince the garlic and roughly chop the spinach. Set all prepared ingredients aside to streamline the cooking process.

    Cook the Turkey: In a large skillet over medium heat, pour in 2 tablespoons of olive oil. Once the oil is shimmering, add the ground turkey, breaking it apart with a spatula. Cook for about 5-7 minutes, or until the turkey is browned and no longer pink. Season with salt and black pepper to taste. Once cooked, transfer the turkey to a plate and cover it to keep warm.

      Sauté Vegetables: In the same skillet, add a splash more olive oil if necessary. Add the diced sweet potatoes, cooking them for about 10-12 minutes. Stir occasionally until the sweet potatoes start to soften and develop a golden color. If they begin to stick, add a splash of water to create steam for cooking.
