Ingredients

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 pound ground beef, turkey, or plant-based alternative

1 tablespoon taco seasoning (store-bought or homemade)

1 cup long-grain white rice, rinsed

2 cups vegetable or chicken broth

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Shredded cheese (optional), for serving

Avocado slices or sour cream (optional), for serving

Instructions

Sauté the Aromatics: Begin by heating the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and bell pepper, stirring occasionally until they become soft and translucent, approximately 3-5 minutes. Incorporate the minced garlic into the pot and cook for an additional minute, allowing the garlic to become fragrant.

Brown the Meat: Introduce the ground beef or turkey to the pot. Use a wooden spoon to break it apart and cook until browned and fully cooked through, about 5-7 minutes. If there’s any excess fat, drain it from the pot.

Spice It Up: Sprinkle the taco seasoning over the meat mixture and thoroughly stir to ensure the meat is evenly coated with the spices, allowing the flavors to meld beautifully.

Combine the Ingredients: To the pot, add the rinsed rice along with the broth, black beans, diced tomatoes (including their juices), and corn. Stir everything together until well mixed. Increase the heat to bring the mixture to a rolling boil.

Cook the Rice: Once boiling, lower the heat to a gentle simmer. Cover the pot with a lid and allow it to cook undisturbed for about 20 minutes, or until the rice is tender and most of the liquid has been absorbed. Resist the urge to lift the lid during this time to ensure even cooking.

Fluff and Serve: After the cooking time is complete, remove the pot from the heat but keep it covered for another 5 minutes. Remove the lid and fluff the rice with a fork, then season the mixture with salt and pepper to taste.

Garnish and Enjoy: Serve your taco rice and beans hot, garnished with freshly chopped cilantro. Top with shredded cheese, avocado slices, or a dollop of sour cream if desired for added creaminess.
