2 lbs ripe tomatoes, halved

1 bulb garlic, top sliced off

1 medium onion, chopped

2 tablespoons extra virgin olive oil

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon sugar (optional, for balancing acidity)

Salt and freshly ground black pepper, to taste

3 cups vegetable broth or chicken broth

1 cup heavy cream or coconut milk (for a vegan-friendly option)

Fresh basil leaves, for garnish

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Tomatoes and Garlic: On a large baking sheet, arrange the halved tomatoes and chopped onion. Drizzle with the extra virgin olive oil, then season with thyme, basil, salt, and pepper. For the garlic, drizzle the exposed top of the whole bulb with a bit of olive oil, wrap it in aluminum foil, and add it to the baking sheet alongside the vegetables.

      Roast the Vegetables: Place the baking sheet in the preheated oven and roast the tomatoes, onions, and garlic for approximately 30-35 minutes. You want the tomatoes to become soft and slightly caramelized, which enhances their sweetness.

        Extract the Garlic: After roasting, allow the garlic to cool for a few minutes. Once it’s safe to handle, squeeze the roasted garlic cloves out of their skins into a small bowl and set them aside.
