Parmesan Zucchini Noodle Bake

4 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

¾ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C), ensuring it's hot and ready for baking.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until it becomes aromatic. Next, introduce the spiralized zucchini noodles to the skillet, cooking them for 3 to 5 minutes, or until they begin to soften. Stir in the chopped spinach and halved cherry tomatoes, allowing them to cook for an additional 2 minutes. Make sure to season the mixture with salt, pepper, and red pepper flakes if you prefer a bit of heat.

      Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan. Add the Italian seasoning to the mixture and blend well until it achieves a smooth consistency.

        Combine Ingredients: In a large baking dish, layer half of the sautéed zucchini mixture at the bottom. Spread half of the ricotta cheese mixture over this layer. Next, repeat the layering process with the remaining zucchini mixture followed by the rest of the ricotta cheese mixture.

          Add Cheese Topping: Evenly distribute the remaining mozzarella and Parmesan cheese over the top layer to create a delicious cheesy crust.

            Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes. After this time, carefully remove the foil and continue baking for an additional 15 minutes, or until the cheese is golden and bubbly.
