Ingredients

For the Peach Salsa:

2 ripe peaches, diced into small cubes

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust to taste for heat)

1/4 cup fresh cilantro, roughly chopped

Juice of 1 lime

Salt and freshly ground black pepper, to taste

For the Tacos:

1 can (15 oz) black beans, drained and rinsed thoroughly

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

8 small corn tortillas

Crumbled feta or cotija cheese (optional, for topping)

Slices of ripe avocado (optional, for topping)

Extra lime wedges, for serving

Instructions

Prepare the Peach Salsa: In a medium-sized mixing bowl, combine the diced peaches, finely chopped red onion, minced jalapeño, and chopped cilantro. Squeeze in the lime juice and sprinkle with salt and pepper to taste. Gently toss the mixture to combine and allow it to sit for about 10 minutes, letting the flavors meld together.

Cook the Black Beans: Heat a skillet over medium heat and add the olive oil. Once the oil is shimmering, add the rinsed black beans, along with the cumin and chili powder. Stir the beans well to ensure they are evenly coated with the spices. Cook for approximately 5-7 minutes, stirring occasionally, until the beans are warmed through and aromatic.

Warm the Corn Tortillas: In a separate skillet (or the same skillet after a quick wipe), warm each corn tortilla over medium heat for around 30 seconds on each side, or until they become pliable and slightly toasted.

Assemble the Tacos: Take a warm corn tortilla and place a generous spoonful of the seasoned black bean mixture in the center. Add a spoonful of the vibrant peach salsa on top. For added flavor, sprinkle crumbled feta or cotija cheese and place a few avocado slices if desired.

Serve with Flair: Squeeze fresh lime juice over the assembled tacos for an extra zesty kick. Serve the tacos immediately with the remaining peach salsa and extra lime wedges on the side for guests to enjoy.

            Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

Presentation Tips: Arrange the tacos on a colorful platter, garnished with fresh cilantro leaves. Serve with a small bowl of the leftover peach salsa for dipping, and place lime wedges artfully around for a pop of freshness.
