Peach Yogurt Popsicles

4 ripe peaches, pitted and diced

1 cup plain Greek yogurt (or your preferred yogurt variety)

1/2 cup honey (adjust sweetness based on your taste)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Peaches: In a high-speed blender, combine the diced peaches, fresh lemon juice, honey, and a pinch of salt. Blend the mixture until it achieves a smooth consistency. For added texture, set aside a few diced peach chunks and fold them into the mixture after blending.

    Mix the Yogurt: In a medium-sized bowl, whisk together the Greek yogurt and vanilla extract until a smooth and creamy mixture forms. Make sure there are no lumps for the best texture.

      Layer the Mixture: Begin filling your popsicle molds by pouring a layer of the blended peach mixture into each mold. Follow with a layer of the yogurt mixture. Repeat these layers until you reach the top of each mold, but be sure to leave a small gap to allow for expansion during freezing.

        Insert Sticks: Carefully place the popsicle sticks into the molds. If the sticks aren't stable, cover the molds with aluminum foil and poke the sticks through to help them stand upright while freezing.

          Freeze: Place the filled molds into your freezer and allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid.

            Unmold and Serve: Once your popsicles are fully frozen, run warm water over the outside of the molds for a few seconds to help loosen them. Gently squeeze or pull the sticks to free the pops from the molds.
