Ingredients

4 ripe pears, peeled and sliced

1 ½ cups fresh raspberries (or frozen raspberries, thawed)

1 tablespoon fresh lemon juice

½ cup granulated sugar, divided

1 teaspoon pure vanilla extract

1 tablespoon cornstarch

1 teaspoon ground cinnamon

1 cup all-purpose flour

½ cup rolled oats

½ cup packed brown sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup cold unsalted butter, cut into cubes

½ cup buttermilk

1 egg (for optional egg wash)

Vanilla ice cream (for serving, optional)

Instructions

Preheat the Oven: Set your oven temperature to 350°F (175°C) to warm up while you prepare the cobbler.

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced pears and raspberries. Add the lemon juice, followed by ¼ cup of the granulated sugar, the cornstarch, and the cinnamon. Gently toss the fruit with these ingredients until all the pieces are evenly coated. Transfer this fruit mixture into a greased 9-inch baking dish, spreading it evenly.

Make the Topping: In a separate bowl, whisk together the flour, rolled oats, brown sugar, baking powder, baking soda, and salt. Add the cubed cold butter to the dry mixture. Use a pastry cutter or your fingertips to blend the butter into the dry ingredients until the mixture resembles coarse crumbs. Pour in the buttermilk and stir gently until just combined, being careful not to overmix.

Assemble the Cobbler: Spoon the topping mixture generously over the fruit filling, allowing some of the vibrant fruit to peek through in places.

Optional Egg Wash: For a beautifully golden crust, beat the egg in a small bowl and brush it over the topping with a pastry brush.

Bake: Place the assembled cobbler in your preheated oven and bake for 30-35 minutes. The cobbler is done when the topping is golden brown and the fruit filling is bubbling at the edges.

Cool & Serve: Remove the cobbler from the oven and let it cool for about 10-15 minutes before serving. For an extra treat, serve warm slices with a scoop of vanilla ice cream on top, if you like.

                Prep Time: 20 minutes | Total Time: 1 hour | Servings: 6-8

                  - Presentation Tips: Serve the cobbler straight from the baking dish for a rustic feel, or scoop individual servings into bowls with ice cream on top. Garnish with a sprinkle of cinnamon or a fresh mint leaf for an added touch of elegance.
