Ingredients

2 cups shredded cooked chicken (roughly from 1 rotisserie chicken)

1 (8 oz) package cream cheese, softened to room temperature

1 cup shredded Pepper-Jack cheese

1/2 cup shredded sharp cheddar cheese

1/2 cup ranch dressing

1/4 cup sour cream

1/4 cup spicy salsa or diced jalapeños (adjust according to spice preference)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper, to taste

Sliced green onions, for garnish

Tortilla chips, for serving

Instructions

Prep the Chicken: Begin by shredding your cooked chicken using two forks or your hands until it’s in bite-sized pieces. Set the shredded chicken aside for later use.

Mix the Base: In a large mixing bowl, add the softened cream cheese, ranch dressing, and sour cream. Use a hand mixer or a sturdy spatula to blend the ingredients together until the mixture is smooth and creamy without lumps.

Add the Cheeses: Gently fold in the shredded Pepper-Jack cheese and sharp cheddar cheese, ensuring that the cheese is evenly distributed throughout the creamy mixture.

Season It Up: Sprinkle in the garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Stir everything together well so that all the flavors meld perfectly.

Combine Chicken and Salsa: Carefully fold the shredded chicken into the cheese mixture, followed by the spicy salsa or diced jalapeños. Ensure the chicken is completely coated with the cheesy mixture.

Bake: Preheat your oven to 350°F (175°C). Prepare an approximately 9x9-inch greased baking dish and spoon the dip mixture into it. Spread it out evenly, and if you wish, top with a sprinkle of additional Pepper-Jack and cheddar cheese for extra flavor.

Cooking: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the dip is sizzling and the top is golden and bubbly.

Garnish and Serve: Once baked, carefully remove the dish from the oven and let it cool for a few minutes. Garnish the dip generously with sliced green onions. Serve warm alongside crispy tortilla chips for dipping.
