2 ripe avocados

1 cup shredded cooked chicken (using rotisserie chicken adds great flavor)

1/2 cup basil pesto (choose store-bought for convenience or try your hand at homemade)

1/4 cup cherry tomatoes, halved for sweetness

1/4 cup mozzarella cheese, shredded for creaminess

2 tablespoons pine nuts, toasted (for garnish)

Prep the Avocados: Begin by slicing the avocados in half lengthwise and carefully remove the pit.
