2 cups cooked jasmine rice (preferably day-old for best texture)

1 cup diced chicken breast (boneless and skinless)

1 cup fresh pineapple chunks (or canned, drained if using)

1/2 cup frozen peas and carrot mix

2 large eggs, beaten

3 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon oyster sauce (optional for added depth)

2 tablespoons vegetable oil (divided)

2 green onions, finely chopped (green and white parts)

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

Salt and black pepper to taste

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Prepare Ingredients: To start, make sure your jasmine rice is cold and broken into separate grains (day-old rice is ideal). Dice the chicken breast into bite-sized pieces and chop the pineapple into chunks.

    Cook Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and season with salt and black pepper. Sauté the chicken until it’s cooked through and no longer pink in the center, about 5-7 minutes. Once done, remove the chicken from the skillet and set it aside.

      Sauté Aromatics: Using the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and grated ginger, cooking until fragrant, around 30 seconds. Be careful not to let them burn.

        Add Veggies and Eggs: Stir in the frozen peas and carrot mix, cooking for 2-3 minutes until they're heated through. Push the veggie mix to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked, then mix them into the vegetable medley.

          Combine Rice and Chicken: Add the cold jasmine rice into the skillet, breaking apart any clumps with a spatula. Fold in the cooked chicken and pineapple chunks, distributing everything evenly.

            Add Sauces: Pour the soy sauce and the optional oyster sauce over the rice mixture. Stir well to ensure every grain of rice is coated in flavor. Continue to stir-fry the mixture for an additional 3-5 minutes, allowing the rice to develop a slight crispiness.

              Finish with Green Onions: Stir in the chopped green onions, tasting and adjusting seasoning with additional soy sauce, salt, or pepper as necessary. Let the ingredients cook together for another minute or two to meld the flavors.

                Serve: Remove the skillet from heat. Garnish with fresh cilantro, if using. Serve your Tropical Delight with lime wedges on the side for a refreshing squeeze of citrus!
