4 cups fresh pineapple, diced into small chunks

1/4 cup fresh mint leaves, plus extra for garnish

4 cups cold water

2 tablespoons agave syrup (or more honey, to taste)

Juice of 1 fresh lime

A small pinch of salt

Prepare the Pineapple: Begin by placing the diced pineapple into a high-speed blender. Blend the pineapple on high until it achieves a completely smooth consistency without any chunks.

    Strain the Juice: Take a fine-mesh strainer or cheesecloth and set it over a large pitcher. Pour the pineapple puree into the strainer, allowing the juice to filter through while separating the pulp. Use a spatula or the back of a spoon to press down on the mixture, extracting as much juice as possible.

      Mint Infusion: Rinse out the blender and add the fresh mint leaves, lime juice, and a small pinch of salt. Blend this mixture until the mint leaves are finely chopped and fully incorporated into a vibrant green paste.

        Combine Ingredients: Pour the mint mixture into the pitcher containing the freshly extracted pineapple juice. Add the cold water into the pitcher and stir well to combine all the ingredients. Taste the agua fresca and adjust the sweetness by stirring in agave syrup or honey as per your preference.
