Ingredients

1 cup pumpkin puree

1/2 cup milk (dairy or plant-based)

2 large eggs

2 tablespoons packed brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

8 slices of thick bread (brioche or challah recommended)

1/4 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Butter or cooking oil for frying

Instructions

Prepare the Batter: In a large mixing bowl, combine the pumpkin puree, milk, eggs, brown sugar, vanilla extract, ground cinnamon, nutmeg, ginger, and salt. Use a whisk to blend the ingredients together until the mixture is smooth and uniform.

Cut the Bread: Take the 8 slices of thick bread and carefully cut each slice into 1-inch wide strips to create finger-sized toast sticks.

Coat the Bread Sticks: Take each bread stick and dip it into the prepared pumpkin mixture, ensuring each piece is evenly coated but not overly soaked. Allow any excess batter to drip off before moving on.

Mix the Coating: In a shallow dish, combine the granulated sugar and 1 tablespoon of cinnamon. Stir well to ensure an even mix.

Heat the Pan: Preheat a skillet or griddle over medium heat. Add a small amount of butter or cooking oil to prevent the sticks from sticking while cooking.

Fry the Sticks: Arrange the coated bread sticks in a single layer on the hot skillet. Cook for about 2-3 minutes on each side or until they develop a golden-brown color and crispy texture.

Sugar Coating: Once they are cooked, promptly roll the warm French toast sticks in the cinnamon-sugar mixture until fully coated for an added sweet crunch.

Serve: Serve these delightful pumpkin spice French toast sticks warm. They’re wonderful with a drizzle of maple syrup, a dollop of whipped cream, or a light sprinkle of powdered sugar. Enjoy them as a delicious breakfast or a cozy snack!
