1 large egg

1 ½ cups all-purpose flour (plus extra for dusting)

1 teaspoon salt

A pinch of ground nutmeg

A pinch of freshly ground black pepper

For the Brown Butter Sauce:

½ cup unsalted butter

6-8 fresh sage leaves

Salt to taste

Freshly grated Parmesan cheese (for serving)

Optional: Chopped walnuts or pecans for garnish

Prepare the Gnocchi Dough:

    - In a large mixing bowl, combine the pumpkin puree, egg, salt, ground nutmeg, and black pepper. Whisk thoroughly until the mixture is smooth and well blended.

      - Gradually incorporate the flour, adding it one cup at a time. Use your hands or a fork to mix until a soft, pliable dough forms that is slightly tacky but not sticky. If the dough is too sticky, add a little more flour as needed.

        Form the Gnocchi:

          - Lightly flour a clean work surface and turn the dough out onto it. Divide the dough into four equal sections. Taking one section at a time, roll it into a long rope approximately ¾ inch in diameter.

            - Cut the rope into 1-inch segments. To shape each piece into gnocchi, gently press down with a fork to create ridges, which enhance the sauce’s adherence. Place the formed gnocchi on a floured baking sheet to prevent sticking.

              Cook the Gnocchi:

                - Bring a large pot of salted water to a rolling boil. Carefully add the gnocchi in batches to avoid overcrowding. They will initially sink, and once cooked, will rise to the top, which should take around 2-3 minutes.

                  - Once the gnocchi have floated to the surface, let them cook for an additional 30 seconds. Using a slotted spoon, transfer them to a plate. Repeat the process with any remaining gnocchi.

                              - Add the sautéed gnocchi directly to the skillet with the brown butter sauce. Toss gently to ensure each piece is coated in the luscious sauce. If you prefer a bit of crunch, mix in the chopped walnuts or pecans.

                                Serving:
