Ingredients

1 cup canned pumpkin puree (or freshly roasted pumpkin)

2 cups spelt flour

1/2 cup walnuts, roughly chopped

1/4 cup honey or maple syrup

1/2 cup warm milk (dairy or plant-based)

1/4 cup olive oil or melted coconut oil

2 large eggs

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

Optional: pumpkin seeds for topping

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5 inch loaf pan by greasing it or lining it with parchment paper for easy removal.

Mix the Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), warm milk, olive oil (or melted coconut oil), and eggs. Use a whisk to blend these ingredients together until the mixture is smooth and uniformly incorporated.

Combine the Dry Ingredients: In a separate bowl, sift together the spelt flour, chopped walnuts, ground cinnamon, ground nutmeg, baking soda, baking powder, and salt. This will help to evenly distribute the baking agents and spices throughout the flour.

Combine Both Mixtures: Gradually introduce the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon. Mix until just combined; it’s perfectly fine for the batter to have a few small lumps—avoid overmixing for a tender crumb.

Transfer the Batter: Pour the batter into the prepared loaf pan. Use a spatula to smooth the surface of the batter, and if desired, sprinkle some pumpkin seeds on top to add texture and visual appeal.

Bake: Place the loaf pan in the preheated oven and bake for 50-60 minutes. The bread is done when a toothpick inserted into the center comes out clean, and the edges are a lovely golden brown.

Cool: After baking, carefully remove the loaf from the oven. Allow it to cool in the pan for about 10 minutes. Once slightly cooled, gently take the bread out of the pan and transfer it to a wire rack to cool completely.

Slice and Serve: Once the bread has cooled down, slice it into generous pieces. It’s delightful served plain or topped with butter, cream cheese, or your favorite nut butter. Pair it with a warm drink for a truly cozy experience!
