Ingredients

4 salmon fillets (approximately 6 oz each)

2 tablespoons olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon lemon zest (fresh is best)

3 cloves garlic, finely minced

Salt and freshly ground black pepper, to taste

1 pound fresh green beans, ends trimmed

1 teaspoon red pepper flakes (optional, for added heat)

2 tablespoons unsalted butter

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven:

Preheat your oven to 400°F (200°C). To make clean-up easier, line a baking sheet with parchment paper.

      Prepare the Marinade:

In a small mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, and a generous pinch of salt and pepper. Whisk until well combined.

          Marinate the Salmon:

Arrange the salmon fillets skin-side down on the prepared baking sheet. Drizzle the marinade evenly over the fillets, ensuring each piece is thoroughly coated. Allow the salmon to marinate for 10-15 minutes while you prepare the green beans.

              Prepare the Green Beans:

Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Carefully add the trimmed green beans and blanch for 3-4 minutes, or until they are bright green and just tender but still crisp. Drain immediately and transfer the beans to a bowl filled with ice water to halt the cooking process.

                  Sauté the Green Beans:

In a large skillet over medium heat, melt the butter. Once melted, add the drained green beans to the skillet, sautéing them for about 3-4 minutes until heated through. If desired, add red pepper flakes for a spicy kick, then season with additional salt and freshly ground black pepper to taste.

                      Bake the Salmon:

Once the green beans are done, place the marinated salmon in the preheated oven. Bake for 12-15 minutes, or until the salmon easily flakes with a fork and is opaque throughout.

                          Serve:

After removing the salmon from the oven, let it rest for a couple of minutes. On each plate, place a salmon fillet alongside a generous scoop of garlic green beans. Garnish with freshly chopped parsley for a pop of color.

Enjoy your delicious and healthy Lemon Zest Baked Salmon with Garlic Green Beans!
