Quick Beef and Broccoli Stir-Fry

1 pound (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

1 bell pepper, sliced (choose red or yellow for a vibrant dish)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (use low sodium if preferred)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional, for a spicy kick)

2 green onions, sliced for garnish

Cooked rice or noodles, for serving

Instructions
 

Marinate the Beef: In a medium-sized bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and 1 tablespoon of vegetable oil. Mix well to ensure the meat is evenly coated. Allow the beef to marinate for at least 15 minutes while you prepare the other ingredients.

    Prepare the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, and if you like a bit of heat, the crushed red pepper flakes. Set this sauce aside for later use.

      Blanch the Broccoli: Bring a pot of water to a rolling boil. Carefully add the broccoli florets and blanch for 1-2 minutes, until they are bright green and still firm. Immediately drain the broccoli and plunge it into a bowl of ice water to stop the cooking process. After a few minutes, drain the broccoli again and set it aside.

        Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is shimmering hot, add the marinated beef in a single, even layer. Sear without stirring for about 2-3 minutes until browned. Flip the pieces and continue to cook for an additional minute until just cooked through. Remove the beef from the skillet and set it aside.

          Sauté Aromatics and Vegetables: In the same skillet, add another tablespoon of vegetable oil. Quickly toss in the minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant. Following that, add the sliced bell peppers and previously blanched broccoli. Stir-fry everything together for 2-3 minutes until the vegetables are colorful and remain tender-crisp.

            Combine and Finish: Return the cooked beef to the skillet. Pour the prepared sauce over the beef and vegetables, stirring thoroughly to coat all the ingredients in the sauce. Allow it to cook for another 2 minutes, or until the sauce thickens slightly.

              Serve: Remove the skillet from heat. Garnish with sliced green onions and serve the beef and broccoli stir-fry immediately over a bed of cooked rice or noodles.
