1 lb (450g) beef sirloin, thinly sliced

2 tablespoons vegetable oil

1 medium red bell pepper, sliced into thin strips

1 cup broccoli florets, cut into bite-sized pieces

1 medium carrot, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (optional for thickening)

2 green onions, sliced thinly for garnish

Cooked rice or quinoa, for serving

Prepare the Beef: In a medium bowl, combine the thinly sliced beef with 1 tablespoon of soy sauce. Gently toss to coat the beef evenly. Allow it to marinate while you prepare the vegetables.

    Heat the Oil: In a large skillet or wok, pour in the vegetable oil and heat over medium-high heat until it shimmers, ensuring it’s hot enough to achieve a good sear on the beef.

      Cook the Beef: Carefully add the marinated beef to the hot skillet in a single layer. Stir-fry for about 3-4 minutes or until the beef is browned and just cooked through, making sure not to overcrowd the pan. Once done, remove the beef from the skillet and set aside on a plate.

        Stir-Fry the Veggies: In the same skillet, add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Next, add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas to the skillet. Stir-fry for approximately 4-5 minutes, or until the vegetables are tender-crisp and vibrant in color.

          Combine Flavors: Return the cooked beef to the skillet with the vegetables. Pour in the remaining 2 tablespoons of soy sauce, oyster sauce, and sesame oil. If you prefer a thicker sauce, introduce the cornstarch-water mixture at this stage. Stir everything together for an additional 2 minutes, allowing all flavors to meld and ensuring everything is heated through.

            Finish and Serve: Remove the skillet from the heat and sprinkle the stir-fry with the freshly sliced green onions. Give everything one last toss to combine. Serve this zesty beef and veggie mix over a generous bed of warm cooked rice or quinoa for a hearty and satisfying meal.
