Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

2 cups mixed vegetables (such as bell peppers, broccoli, snap peas, and carrots)

4 cloves garlic, minced

1-inch piece of fresh ginger, grated

1/2 cup teriyaki sauce (you can use store-bought or homemade)

1 tablespoon sesame oil

2 green onions, thinly sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked steamed rice or quinoa, for serving

Instructions

Marinate the Chicken: In a medium bowl, mix the chicken pieces with 2 tablespoons of teriyaki sauce until evenly coated. Cover and let the chicken marinate for approximately 15 minutes to absorb the flavors while you prepare the vegetables.

Prepare the Vegetables: Wash and chop your selection of mixed vegetables into bite-sized pieces, ensuring uniformity for even cooking. Set aside until ready to use.

Sauté the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once the oil is shimmering, add the marinated chicken pieces to the pan. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

Incorporate Aromatics: Add the minced garlic and grated ginger to the skillet. Stir continuously for about 30 seconds or until the garlic is fragrant, making sure not to let it burn.

Stir-Fry the Vegetables: Toss in the prepared mixed vegetables. Stir-fry for 3-4 minutes, stirring frequently, until the vegetables are vibrant and tender-crisp, maintaining some of their freshness.

Add Sauce and Finish: Pour the remaining teriyaki sauce and sesame oil into the skillet. Stir well to ensure all the ingredients are coated with the sauce. Cook for an additional 1-2 minutes to allow the sauce to warm through and thicken slightly.

Garnish and Serve: Remove the skillet from heat. Transfer the teriyaki chicken and vegetables to a serving platter. Garnish with sliced green onions and a sprinkle of sesame seeds for added flavor and presentation. Serve hot over a bed of steamed rice or fluffy quinoa to soak up the delicious sauce.
