Ingredients

4 ears of fresh corn, husked

2 medium jalapeños, seeds removed and finely chopped

1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup shredded sharp cheddar cheese

½ cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons fresh cilantro, chopped (for garnish)

Tortilla chips, for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Roast the Corn: Arrange the husked ears of corn on a baking sheet. Roast them in the preheated oven for approximately 25-30 minutes, or until the kernels are tender and show a hint of charring. Once done, allow the corn to cool sufficiently before cutting the kernels off the cob. Set the kernels aside.

Prepare the Jalapeños: While the corn is roasting, heat a small skillet over medium heat. Add the finely chopped jalapeños and sauté them for about 5 minutes, or until they become tender. Remove from the heat and let them cool for a moment.

Mix the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, and a sprinkle of salt and pepper. Use a handheld mixer or a sturdy whisk to blend the ingredients together until the mixture is smooth and creamy.

Combine the Ingredients: Carefully fold in the roasted corn, sautéed jalapeños, and shredded cheddar cheese to the creamy base until everything is evenly combined.

Transfer to Baking Dish: Spoon the lively mixture into a 9-inch baking dish or another similarly sized oven-safe dish, spreading it evenly.

Bake the Dip: Place the baking dish in the oven and bake for 20-25 minutes. You’re looking for the dip to bubble and for the top to take on a delightful golden hue.

Garnish and Serve: Once baked, remove the dip from the oven and allow it to cool for a few minutes. Just before serving, sprinkle freshly chopped cilantro over the top for a burst of freshness.

Enjoy: Serve this scrumptious dip warm alongside a generous bowl of crispy tortilla chips for dipping!
