Ingredients

4 ripe peaches, halved and pitted

2 tablespoons extra virgin olive oil

2 teaspoons fresh thyme leaves (plus extra for garnish)

1 tablespoon balsamic vinegar

2 tablespoons honey or maple syrup (your preference)

Pinch of sea salt

Freshly cracked black pepper to taste

Optional: Crumbled goat cheese or feta for serving

Optional: Toasted walnuts or pecans for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for roasting.

Prepare the Peaches: Rinse the peaches under cool water to clean them. Halve the peaches and carefully remove the pits. Arrange them cut-side up on a lined baking sheet for easy cleanup.

Create the Herb Oil Mixture: In a small mixing bowl, whisk together the extra virgin olive oil, fresh thyme leaves, balsamic vinegar, honey or maple syrup, a pinch of sea salt, and freshly cracked black pepper. Mix thoroughly until all ingredients are well combined and emulsified.

Coat the Peaches: Using a brush or a spoon, generously apply the herb oil mixture over each peach half, ensuring they are fully coated to soak in all the delicious flavors.

Roast the Peaches: Carefully place the baking sheet in the center of the preheated oven. Roast the peaches for about 20-25 minutes, or until they become tender, slightly caramelized, and sporting a lovely golden color.

Serve the Peaches: Once the peaches are roasted to perfection, remove them from the oven and allow them to cool for a few minutes. Serve warm, garnished with additional fresh thyme. If you like, sprinkle with crumbled goat cheese or feta, and add a handful of toasted walnuts or pecans to introduce a delightful crunch.

Savor the Dish: Enjoy this exquisite blend of sweet and savory flavors as an elegant dessert or as a unique accompaniment to your savory dishes!
